Sweetened SPAM Delight

For lack of anything good in the fridge tonight, and considering that I got home past 8pm, my only hope for dinner was something in a can. Thank goodness we got SPAM.

I know, I know. It’s unhealthy. But hey, I got the 30% less sodium and 30% less fat. That makes it a little less unhealthy 🙂

This is something we don’t usually do but tough times call for desperate measures.


  • 1 can of SPAM
  • 1 small pouch pineapple tidbits
  • 2 tbsp. red wine vinegar
  • 2 tbsp. light soy sauce
  • 2 tbsp. brown sugar
  • 1 medium red bell pepper
  • 1 tsp sliced ginger

Cut your SPAM into 1 inch cubes. Fry in a pan along with the ginger. Add in the light soy sauce and red wine vinegar. Let simmer for 3 minutes. Drop in the red bell pepper. Next add the pineapples. Taste and if the sweetness contributed by the pineapples is fine, you can take it out of the heat. If you want it a little sweeter, add in 2 tbsp. of brown sugar and cook for another 1-2 minutes before moving out of the heat.

Serve with a hot cup of rice 🙂

Unhealthy dinner but I guess it’s fine if done once in a blue moon.

    Haha! This is wonderful, you featuring a meal with Spam. My mom used to simply cut up a can into slices and fry it up in a bit of oil so it gets that bit of delicious crisp to it. Your dish must taste delicious.

    My most unhealthy dinner: One (or was it two?) slice(s) of cake.

    oh my goodness when I saw the name of this post I just had to check it out. I’ve never had spam but it looks yummy. Sometimes easy is the way to go and health needs to take a back seat 😉
