Chicken Fillet Inasal

As I mentioned in my Myriad Monday #2 post, today’s our Diet Day 1 πŸ˜› Since we’re not technically following a program but are just eliminating rice and cutting down on sugars and sodium, we’re still free to eat what we want as long as it’s a balanced healthy meal.

For dinner tonight, I made chicken fillet inasal (grilled chicken with light anatto oil) and I served it with salad greens with strawberry vinaigrette, light cheddar melt on button potatoes, and seedless grapes.

It’s aΒ  balanced healthy meal πŸ™‚ And don’t worry! I had dinner before 6pm. That’s at least 5 hours away from the time I’m gonna hit the sack. No worries about having a filling meal as this one.

What you’ll need for the chicken fillet inasal:

  • 1/8 cup annatto seeds mixed with 1/4 cup extra virgin olive oil
  • 4 cloves garlic
  • 4 pcs. chicken fillet
  • dash of pepper
  • dash of paprika

Mix garlic with the annatto oil and marinade the chicken for at least 2 hours.

Heat up a non-stick pan. Get a paper towel and pour extra virgin olive oil or 0% cholesterol canola oil on it. Rub the pan with the soaked paper towel. Drop in your chicken fillets.

 

Add a dash of paprika and ground pepper as you grill the chicken on each side. Cook 3 minutes each side or until the chicken fillet has browned.

You can eat it as is with a sauce made of white vinegar and light soy sauce. Or you can enjoy your chicken it with a bunch of other goodies like salad greens, button potatoes, and seedless grapes.

It’s up to you on what to put on your plate but don’t forget to have carbs, protein, veggies, and fruits πŸ™‚

If healthy dinners are this good, I wonder why I never made one until now!? πŸ™‚
