Apple Carrot & Walnut Cupcakes

I haven’t been baking in a long while and I thought why not make use of my leftover carrots and apples?!

I found this recipe for Carrot Cupcakes from Joy of Baking. The blog post said the recipe will make moist and delicious cupcakes. I had second thoughts at first because I have been following recipes from blogs and I never had a very successful experience yet to date (that means, I still need to adjust some stuff to arrive at the outcome I want).

But… when I tried this recipe and the cupcakes came out, man, they’re really moist and delicious! I’m so stoked to share this recipe with you and I hope that you will also try it at home πŸ™‚

 

Ingredients:

  • 2 cups all-purpose flour
  • 1 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1 1/2 tsp. cinnamon
  • 4 large eggs
  • 1 cup white sugar
  • 1 cup canola oil
  • 2 cups grated carrots
  • 1 cup grated apples
  • 1/2 cup chopped walnuts or pecans
  • 1 cup raisins or currants (but I used dried cranberries)

Preheat the oven to 350F and line your muffin pans with paper liners.

In a bowl, whisk together flour, baking soda, salt and cinnamon. Make sure they’re mixed well.

In another bowl, whisk the eggs, sugar and oil until thick.

Fold the flour mixture to the egg mixture. Next, fold in the carrots, apples, cranberries, and nuts.

 

Divide the batter evenly among the 20 muffin cups and bake for 20 minutes or until a toothpick inserted in the center of a cupcake comes out clean.

 

For the frosting:

  • 1/2 cup unsalted butter
  • 8 oz. cream cheese
  • 3 cups confectioner’s sugar
  • 1 tsp. vanilla extract

 

 

In a bowl, beat butter and cream cheese with an electric or a hand mixer. Beat until very smooth and creamy. Gradually beat in the confectioner’s sugar until fully incorporated and smooth. Last, beat in the vanilla extract.

By the way, in case you run out of confectioner’s sugar like me, you can make your own at home:

 

Substitute for Confectioner’s Sugar:

  • 1 cup granulated or refined sugar
  • 1 1/2 tsp cornstarch

Mix and grind in a blender, NOT in a food processor. I tried it with a food processor and it didn’t work.

 

So there ya go…

Moist, delicious and pretty cupcakes for your afternoon snack. Believe me, they’re so good you wouldn’t believe they’re made of carrots πŸ˜›
