This is another chicken dish that’s easy to prepare. If you noticed, I’ve been posting a couple of chicken recipes here. I happen to join my friends on a no-rice diet and the chicken dishes are my best options to allow me to stick the diet without feeling deprived 🙂
I used green beans and white wine vinegar for this dish. It’s really simple, you’ll see.
- 2 tbsp. light canola oil
- chopped garlic
- 3 pcs. medium tomatoes, chopped
- 1/4 kilo chicken breast fillets, cut into bite-size pieces
- a bunch of green beans, cut into 2-inch pieces
- 2 tbsp. white wine vinegar
- 1/2 chicken bullion
Heat up oil in a pan and when heated, saute garlic and tomatoes. Cook until tomatoes are wilted and its own oils are released. Next add the chicken cutlets and cook until meat is tender. Drop in the green beans and add white wine vinegar. Cover and don’t stir. Let simmer for about 3 minutes.
Remove cover and stir everything together. Add chicken bullion and sugar if you want to balance the sourness of the dish. Simmer for another 2 minutes and you’re done 🙂
