Food Trippin’ in Hongkong: FOOD REPUBLIC

On our way to Lantau Island to visit the Tian Tan Buddha, we stopped by for lunch at Food Republic in Citygate Outlets, Tung Chung. Food Republic is a food court chain run by the BreadTalk Group based in Singapore. The concept combines local hawker fare with mini restaurants in an open dining concept.

As with the other food courts, it can get really rowdy during lunch breaks. When we went there, it was so hard finding a seat. After a while, we spotted some free seats but there was no one near enough to clean the table. We had to clean the table ourselves just so we can eat 😦

There are many food stalls to choose from. They got Japanese, Macanese, Vietnamese, Chinese, etc. What I was looking for, however, was Singaporean because I want to try their Hainanese Chicken Rice.

Hubby got the regular Hainanese Chicken Rice set which came with a soup and a side dish. For variety, I got the Roasted version which also came with a soup and Chinese cabbage.

There’s something I learned about Hainanese Chicken.

It’s all about the skin, baby!

Their Hainanese Chicken skin is glossy and I’m thinking maybe it’s because they brush it with some kind of oil or maybe peanut oil. I don’t really know and I’m dying to find out! Also, I noticed that they pound on the chicken part they’re serving so it becomes thin. I don’t know the science behind it or maybe it’s just a way of making the chicken part look bigger because the meat’s spread out due to pounding.

This also happens to be the first time that I encountered a Hainanese Chicken that’s roasted?? This one is as tender as the regular Hainanese Chicken but the skin is browned. I don’t know how they did it but it’s also another thing that I would love to discover 🙂

The food was okay. And in the food business, “okay” is the worst enemy of great. Actually, I probably would have liked it more if I don’t cook Hainanese Chicken Rice myself. With every spoonful of rice my hubby had, he would always utter “no match” or “yours is better than this.”

I’m not saying the food was bad but it definitely is not as flavorful as my homemade version is. At the end of the day, it still is worth a try because it’s from these experiences that we learn to create. And to improve 🙂

    Ah how I miss Food Republic! Good thing the food is just “okay” – makes me feel better about not visiting HK for awhile for now 🙂 But, I do love a goooood hainan chicken rice mmmm.

    The ultimate comfort food, isn’t it. You are right, just”okay” isn’t enough when it comes to chicken rice. I actually roast the chicken in the end to make it brown. I don’t know if you’re interested but my post title is Nasi Ayam.
