Triple Decker Strawberry Chicken Club Sandwich

This is my entry to PinoyFoodista ‘s February Cooking Challenge, Strawberries in a Sandwich.

PinoyFoodista hosts monthly cooking challenges where the monthly winner gets a prize from PinoyFoodista. PinoyFoodista Cooking Challenge is open to anyone but only Metro Manila residents are entitled to take home the prize. Those from outside Metro Manila (or the Philippines) may still win and they will still be given a feature spread in PinoyFoodista.com, but if they want to claim the prize, they should name a Metro Manila resident as their prize “beneficiary” πŸ™‚

This month, PinoyFoodista partners with Monsees Cafe and the winner of the Strawberries in a Sandwich Challenge shall be entitled to a lunch/dinner for two at Monsees Cafe, a limited edition PinoyFoodista t-shirt, and a feature spread in PinoyFoodista.com.

Now, let me show you more about my sandwich πŸ™‚

The cast of characters are:

  • 4 slices of bread
  • 2 tbsp. shredded / leftover chicken
  • 1 slice of sweet ham, fried
  • 2 tbsp. light mayonnaise
  • 1 tbsp. lemon juice
  • 1/8 tsp. cayenne powder
  • 1 tbsp. strawberry jam
  • fresh strawberries
  • salt and pepper to taste

You can use any bread you like but in my case, I used the simple and plain white loaf bread. Cut the edges and you can set them aside in case you want to make bread pudding πŸ™‚ For this sandwich, we’ll just use the loaf bread minus the hard edges.

Slice the strawberries and lemon. We’ll use the strawberries in the sandwich while the lemon will be used to prepare the chicken spread.

Mix the shredded chicken, mayonnaise, lemon juice, salt, pepper and cayenne powder in a bowl. Set aside.

We’re now ready to assemble!

This sandwich is a variation of the original one which calls for bacon strips. I want it to be a little low on sodium so I used sweet ham instead. So, for the first layer, spread a teaspoon of light mayonnaise on each face of the loaf then put the ham slices on top. This is the “salty” layer.

Next, get another slice of bread and put the chicken spread on top. This is the “tangy” layer.

The third layer is the “sweet” one. Get your third slice of bread and put some strawberry jam on it before topping with fresh strawberries.

There you have it. Your salty, tangy, and sweet triple decker strawberry chicken club sandwich! It sounds so loaded, right? πŸ™‚

If you’re serving it to guests, or bringing them to the office for your packed lunch, or in case you wanna go out for a picnic, you can wrap some specialty paper around it and decorate with colorful stickers or ribbons πŸ™‚

    I love strawberries in salads, but I have never thought to put them on a sandwhich before. I would love to try this on some whole wheat bread…yum!

      hi Aimee! it’s a risk worth taking because the strawberries apparently are very versatile πŸ™‚ my friend mixed it with zucchini and bacon and the sandwich was dee-lih-cioso! πŸ™‚

      hey Adora! there are so many things going on in the sandwich and i was at first afraid at how it will come out but the flavors just blended well πŸ™‚ it’s a great sandwich and very filling too (filling = substitute for my usual rice meal hehe) πŸ˜›
