Caramel Chicken

I was looking for another easy chicken dish recipe and I bumped into this great one from Almost Bourdain. She got the recipe from Bill Granger and I’m so happy to have found the recipe too 🙂  It was simple and perfect with rice!

I prepared the dish last night and hubby was already asking for a repeat. I don’t mind doing it again because I only need an hour to prepare and cook the entire dish. This is really a great dish to make when you don’t have much time.

Creamy Chicken Spaghetti With Carrots and Cauliflower

I haven’t been cooking much lately. I’m busy at work and with PinoyFoodista and I feel like I’m not touching base enough with this blog and my blogger friends 😦 I promise that as soon as PinoyFoodista is stable (shouldn’t take that long, I hope), I’ll be more visible again 🙂

So, in one of those rare instances that I find time to cook, I made something easy out of what I already have in the kitchen. I call it Creamy Chicken Spaghetti with Carrots and Cauliflower. The dish is as literal as its name 😛

Quick & Easy Chicken Quesadillas

If you noticed, I have been making a lot of easy and simple chicken dishes lately. And to save myself from getting bored with chicken breast fillets, I try as much as I can to make different dishes out of it. One of my favorite simple chicken dishes to make is chicken quesadillas.

Quesadillas are always popular at home because they’re tasty and flavorful, and also very easy to munch on. You can just pick up a slice and enjoy it as you read a book or watch TV or do whatever. I personally love making quesadillas because they’re easy to assemble and they’re really a great way to make use of items that have been lurking around the fridge for a while.

Saucy Chicken Marmalade

I should have posted this a week ago but something went wrong with the photos. I lost all of them and was only able to recover one 😦

Anyhow, let me share with you an easy chicken dish that’s akin to the usual Orange Chicken minus the flour batter that covers the chicken cutlets. The recipe is good for 4 servings and each serving has only 213 calories. This one’s good for people on a diet or those who are watching their calorie intake 😀

Perfect Roasted Chicken

Who loves Ina Garten and her show/cookbooks Barefoot Contessa? Raise your hands! 😛

I really love Ina Garten and it makes me sad that I couldn’t catch her shows here anymore… damn cable operator. On a brighter side, I still have her cookbooks and she’s online!

Last Saturday, my parents came over for dinner and I prepared Ina Garten’s Perfect Roast Chicken for them. With a little adjustment (I took out fennel because I didn’t have time to go to Santi’s and used leftover raw potatoes instead! *gasp, what was I thinking*), I still managed to make a real juicy perfect roast chicken 🙂

I think the photo makes it obvious!
